If Salad Dressing (Miracle Whip, etc.) is never put in the refrigerator, will it cause food poisoning when used?
Mom was told by a woman who worked in a concession stand that the jars of salad dressing used there were never put in the refrigerator, and that as long as they were never refrigerated, they'd never cause food poisoning. She said she'd never have believed it if she hadn't seen it for herself. (The woman, not my mom.) There's never been a case of food poisoning for as long as she has worked at that concession stand. The practice began long before she ever went to work there herself.
Could this be true? And if so, why? What difference does refrigeration make?
